Ingredients:
2 cups whole wheat flour
1.5 tbsp organic baking powder
3 tbsp agave syrup
1/8 tsp salt
5 tablespoons of organic butter or apple sauce
1 1/2 cup fresh blueberries
1/2 cup plain yogurt
1/2 cup coconut milk
1 tbsp lemon zest
Begin by heating your oven to 350 degrees. Mix together the flour and baking powder. Then with your hands, mix in the organic butter (or applesauce). If you're looking to watch your calories, try it with the applesauce. If you're just wanting it to be healthier for your body than a typical butter would be, use organic butter. The butter has a richer flavor and the texture of a regular scone, and the applesauce has more of a sponge like texture. Next, mix in the agave syrup, salt, lemon zest, and berries. Mix together the yogurt and milk in a separate bowl, and then combine with the rest of the ingredients. I made one batch with the lemon zest and one without and liked the lemon zest batch better, but both had a great flavor! On a greased pan, bake at 300 degrees for 15-20 minutes, depending on your oven. Make sure these don't burn! I watched mine carefully and allowed them a few extra minutes so that the bottom was crispy. These will appear soft on the top but will harden once they've cooled. Enjoy!

ReplyDeleteWas craving scones while I was sick so I've had this recipe sitting ready to make as soon as my stomach was ready haha - just made them (without the berries), cut in half and served with jam and a whipped cream made of Greek yogurt, protein powder and coconut flour. Amazing. I feel human again :-)
