Chocolate covered espresso beans are a life saver when you're on the go especially when traveling and camping in the summer. Don't get me wrong, I can survive without a cup of coffee in the morning, but I'm much more pleasant to be around after I've had a cup or two. ;) This recipe will be a go to over the next few months as wedding season starts to pick up.
Here's how you can make your own!
ingredients:
1 cup organic espresso beans
3/4 cup organic chocolate chips
1 tbsp organic milk *optional
cocoa powder *optional
Begin heating the chocolate and milk on the stove top on low heat. Continually stir the chocolate to prevent it from burning. Once it's completely melted, stir in the espresso beans. After the beans are covered in chocolate, take them out one by one with a fork and allow them to cool on a sheet of wax paper. I prefer mine to just have plain chocolate, but for an extra chocolatey flavor, roll the beans in cocoa powder before the chocolate has dried. Place in the refrigerator for 30 minutes or until chocolate completely hardens. Store in a sealable container in a cool place.
